Whats for Dinner: Buffalo Chicken and Rice

Hello fellow quarantiners! Like most of the country, we are obviously stuck in the house currently, and I don't know about you but I'm bored. And after months of not being able to stand long enough to cook I'm loving being in the kitchen again. With all the extra time the stay at home order is giving us, that means we are trying a lot of new dinner options. So as we try them, I'll start to share the ones that we enjoy!
Our first dinner option that we tried and will definitely be making again is Buffalo Chicken and Rice. This could be baked a little extra to make it a casserole but I made it all on the stovetop to save time and it was AMAZING. Like the bad blogger I am, there are no pictures because 1) I forgot and 2) I wasn't paying attention to presentation so it kind of ended up a lumpy mess. But a tasty lumpy mess!
What you'll need:
-A package of diced (Bite size) chicken Tenderloin. (2 if you like more chicken)
-2 tbsp. of Butter
-1 cup of Celery (You could also add a cup of onion, but we were out)
-1 1/2 cups of Rice
-2 1/2 cups of chicken broth or water
-1 cup shredded cheddar cheese
Sauce:
-1/2 cup of Mayo
-1/4 cup of Ranch
-1/2 cup of your favorite hot sauce.
In a pan, put the butter, chicken and celery. Cook until the chicken is cooked through.
Once the chicken is cooked, add in the rice and chicken broth/water. Cover and cook for about 15 minutes. Once the liquid cooks down, add in the hot sauce mixture and top with the shredded cheese. Cook until the cheese is melted. That is it! It is so quick to make and so tasty! I know the hot sauce mixture sounds odd, but trust me. It helps make the dish creamy and rich!
Optional: Top/garnish with chopped green onions and blue cheese!
