Fresher take on Steak!

Do you ever get sick of eating the same thing over and over? I certainly do! I go through fazes where I just recycle through a set of recipes over and over for month. I end up eating the same thing over and over, for weeks on end. Which is what I've been doing for the last few weeks. One can only eat baked chicken so many ways before it gets old. At the same time, as scrumptious as steak is, sometimes you need a fresher take on it! So today I tried a little something. I got the idea for this from my caprese grilled cheese sandwich that I like to make(more on that later). While caprese is usually mozzarella, tomato and basil, I switched out the basil for spinach!



I'm not going to lie, I didn't measure a darn thing while making this. I feel like when it comes to steak, its your own personal flavor preference, and I can assure you, you probably don't like garlic as much as I do, so theres really no point in saying how much of it I used( a lot, like a LOT). Also, I'm not too picky with my ingredients, I never feel the need to get the best brand of anything. I really just try to pick the healthier of choices. Anyways, heres the how to! Enjoy! xo-B


You will need:

Garlic-Minced

Spinach- Chopped

Roma Tomatos- thinly sliced. (2 slices per piece of steak)

Mozzarella- sliced (1 per piece of steak)

Steak- (the type you use is really your choice. I cut mine in half to get 4 days of food)

**Extra points if you have pathetic pups to sit and stare the whole time**

I started with a little of my Smart Balance Butter in my pan over medium-high heat and threw my mounds of garlic in there. I then tossed my steak on top of it. I don't like my steak cooked well done. The bloodier the better. Really, if its not mooing, you cooked it too much! I then flipped it over, making sure not to flip it back and forth. It cooks more even when you aren't flipping it every which way! After its flipped, I added two slices of the Roma Tomato, enough of the chopped up spinach on top to cover the steak and then I placed a slice of mozzarella on top! Because mozzarella is a little tougher to melt down, I placed a top over the pan and let it sit for about five minutes. This helps melt it all down, but don't leave it too long! Your steak will end up overcooking! After five minutes, I took the lid of and boom! Done. This is a pretty light recipe in my opinion. It wasn't heavy at all, so if it usually takes more to fill up, I suggest throwing in a nice side of something starchy like potatoes or pasta. I wasn't too hungry so I just threw some broccoli on the side and it did the job! Enjoy!
