Whats for dinner: Shrimp Tacos

Its Taco Tuesday in the Santiago household and instead of making my shrimp tacos how I usually would (that recipe will come next week), I decided to try something different. Keep in mind as I share recipes, I'm constantly subbing things and just using what I have in the house that is similar. The economy is ridiculous and I don't like food going to waste or spending unnecessary money. This does have some heat to it so if you're serving it to kids or don't like spice, switch out the jalapeño for some green bell pepper and use less sriracha in the sauce!
(The amount I list provided 7-8 tacos. For more, you really just need more shrimp, there was plenty slaw and salsa left)
What you'll need:
1 Tomato
1 jalapeño
1 onion (I used white, but purple would be better)
1 mango
Cilantro (I used the whole bunch)
1 bag of shrimp
Flour tortillas
Plain, greek yogurt
siracha
sugar
water
bagged cabbage slaw mix
Cut up your tomato, jalapeño, onion, mango and cilantro. Add this all to a bowl with some garlic salt and pepper and mix until well combined. Put in the fridge.
chop up the shrimp into small pieces. Toss in a bowl with some oil and your favorite seasons. For this I used a little Old Bay, Slap Ya Mama, and Smoked Paprika. Cook until done and set aside.
Warm up your tortillas.
In a bowl combine a few heaping spoonfuls of Greek yogurt, siracha and 1 TBSP of sugar. This will be more to your taste buds. I personally used a full single serving cup of greek yogurt and maybe a tbsp of sriracha. Once combined add water until you get a consistency that you can drizzle with.
Assemble tacos to your liking! Shrimp, slaw, salsa and sauce and enjoy!
With shrimp tacos I usually roast some corn in the pan and add equal parts mayo, sour cream with some street corn seasoning and cotjia cheese. If you can't find cotjia, a little mozzarella works as well!
-If you don't like greek yogurt, just use sour cream! I stopped using sour cream a long time ago because plain greek yogurt does the same thing for me but is a bit healthier!
-If you're carb conscious, try the Carb Balance or Zero carb tortillas. I've only tried the Carb Balance and had no complaints. I don't know if these specific shrimp tacos would taste good with corn tortillas, but I will post a second shrimp taco recipe that uses corn instead of flour!
