Whats for Dinner: High Protein Chicken Gyro

My husband constantly tells me how eating out has gotten so hard because most of what we would get, I make at home and he says it taste better. What he doesn't realize is I learned to make all of these things so we don't have to eat out!
When deciding what would be on the menu for the week he said "We haven't had Gyro's in a long time." Well sir, that would be because that's something I've never cooked, but lets give it a shot.

If you've never had a Gyro, they are typically made with lamb, and they are amazing. However, because I like to work off of what I have, I wanted a chicken option. For this recipe, you're getting the protein from the chicken as well as the low fat (I used 0% fat) greek yogurt!
What you'll need:
Low fat greek yogurt
Lemon juice
Salt
Cumin
Smoked Paprika
Coriander powder
Pepper
minced garlic
2 chicken breast, cut into half and then into 3 pieces each
Dill
Grated cucumber
Flour
Tomato
Red onion
Put your cut up chicken into a ziplock bag (or a bowl if you're being bougie). Throw in the yogurt, lemon juice, minced garlic and seasoning.
Close the bag, releasing as much air as possible and massage until chicken is thoroughly coated.
Toss the bag in the fridge and let it hang out for a couple of hours
For the Tzatziki Sauce: Combine 1/3 cup greek yogurt, 2/3 tbsp of minced garlic, dill (To taste), grated cucumber and lemon juice in a bowl.
Bake your chicken to your preference. To get the "shaved" pieces that are traditionally in a Gyro, cut an onion in half and stab 2 skewer into the top, staking the chicken on top of each other on the skewers. I baked this at 425 degrees for 30-40 minutes. (I didn't feel like messing with the height of the shelves in the oven so I used metal skewers as pictured below. Because the chicken is so close together, make sure you check that each piece is fully cooked.)

6. For the Flatbread: combine 1 1/2 cup of flour with 1cup of greek yogurt and some garlic powder. Roll the dough out to a circle. Make sure to flour your surface before rolling and add flour to the dough if its too sticky touch or roll out. Cook in a pan or 2 minutes on each side. (This SHOULD make 2 large ones and 2 small ones. To make more add a ratio of 1/2 of flour to 1/3 cup yogurt per serving)
To assemble:
+Tzatziki sauce
+Sliced Tomato
+Sliced Red onion
+Chicken
+Drizzle of the sauce
+Parsley (optional)
-Note, for the dough only being made out of yogurt and flour it is VERY good, but definitely don't leave out your seasoning. I ran out of regular garlic powder and had a bottle of Jane’S Krazy Seasonings Mixedup Chunky Garlic Seasoning that tasted REALLY good in this. But use what you have on hand and experiment.
